Enzyme glucose oxidase was found in fungi. In addition to enzymes - biological catalysts - in nature, yet there are organic compounds whose presence even in small quantities affects the most important vital functions. These substances are called vitamins. Without them, the impossible body's metabolism, therefore, there can be no life!
Physiological value of grapes depends mainly on the content of various vitamins, lots of * glucose, and organic acids. Grape wine in this regard has a special place among food products. In grapes and grape wine contains almost the entire vitamin complex, which needs a human body. Vitamin B2 (thiamine). Thiamine plays an important role in alcoholic fermentation.
With aging of the wine on lees autolysis of yeast occurs and the release of vitamins, which are accumulated in the wine.
Thus, the processing of grapes and wine making-of material amounts of vitamin B2, is significantly reduced, while exposure of wine yeast increases again. |
